Foodie Friday – 50 Nights at The Magnolia


We love to check out pop-up restaurants but we sometimes wish they’d stick around for a little bit longer. We’re pleased that Magnolia Hotel & Spa’s new concept 50 Nights at The Magnolia will be open for 50 nights, so we can get a chance to enjoy different dishes from the ever-changing seasonal menu.

Chef Will Willgress’ menu features globally inspired but locally sourced dishes that make the most of Vancouver Island’s natural bounty. We’re looking forward to heading over there and trying a new twist on some old favourites like Beef Short Rib Curry with roasted cauliflower risotto, buttered savoy cabbage, apple raita and apricot chutney, or Miso Broiled Albacore Tuna with edamame puree, dashi butter, charred Chinese eggplant, pea shoots, squash fried rice, sesame and soy lacquer.
