Drink of the Week – ‘Incognito’ cocktail from Hawksworth Restaurant

In celebration of Vancouver Craft Beer Week, talented Head Bartender Cooper Tardivel at Hawksworth Restaurant has crafted an ‘Incognito’ cocktail inspired by the team’s favourite ‘hoppy IPA’ beer. The fun new cocktail welcomes Vancouver Craft Beer Week which kicked off last Friday as well as the fast-approaching summer season, featuring one of the team’s favourite libations, tequila.

Tardivel’s concept was to create a refreshing tequila cocktail that tastes like an IPA. This tasty incognito cocktail (literally) mixes hop-infused tequila, fresh grapefruit juice, Montenegro Amaro, Abricot du Roussillon, house-made vanilla syrup and one spoon of Angostura bitters.

Method:
Add all ingredients into a cocktail shaker, shake vigorously, and double strain into a chilled cocktail coupe. No garnish required, as the agitated oils from the hops will create a wonderfully aromatic “head”, just as a “hoppy” IPA would.
