One night only: Chef David Hawksworth collaborates with protégé Chef Paul Moran
Chef David Hawksworth travels to Tofino on Saturday, May 19,to cook at 1909 Kitchen with Chef Paul Moran at Tofino Resort and Marina, where the two chefs and friends are excited to reunite under the roof of 1909 Kitchen for one night only.
Chef Hawksworth lived in Tofino in the late 1980’s when he was a young cook with the opening team at Orca Lodge, before he moved to Europe for a decade to work with Michelin starred luminaries, such as Marco Pierre White, Philip Howard and Raymond Blanc. Upon returning to Vancouver in 2000, he led the kitchen brigade at West Restaurant, where Paul Moran was part of his team for three years.
Chef Hawksworth opened his eponymous restaurant in 2011 and Hawksworth Restaurant was named Canada’s Best Restaurant in its first year of operation. In 2013 The Hawksworth Young Chef Scholarship Foundation was launched, and young chefs from across the country competed for a $10,000 prize and an international stage. Chef Moran proved his mettle and was the first young chef to take home the grand prize.
“I always saw huge potential in Chef Moran,” says Chef Hawksworth of his young protégé. “His commitment and drive mirrored my own and I’m so proud of everything that he has achieved. I am really looking forward to being in the kitchen with him again next weekend.”
Chef Moran’s experience extends beyond Vancouver to include international experience; from the Jumeirah Beach Hotel in Dubai, to the two Michelin starred Hotel Negresco in Nice, France, and Saturne Restaurant in Paris, where he worked alongside Chef Sven Chartier. Drawn back to the West Coast of Canada, Chef Moran has been at 1909 Kitchen since its opening last summer. There he delivers ingredient-driven dishes, sourced and foraged from Tofino’s oceans, shoreline and forests, and he has created a distinctly Tofitian menu, including speciality dishes from the Mugnaini wood-fired oven.
Chef Hawksworth continues to operate Hawksworth Restaurant, Nightingale, and Bel Café (a second location is due to open this spring) and has also recently expanded kitchen space to officially launch Hawksworth Catering. Chef Hawksworth is also the culinary partner to Air Canada and is currently working on his first cookbook, which is due to be published in 2019.
