Romance is in the air at Hawksworth Restaurant

This Valentine’s Day, indulge in an evening of romance at Hawksworth Restaurant and enjoy the intimate surrounds of Vancouver’s leading fine-dining restaurant. Chef de Cuisine, Quinton Bennett, and his team present a seven-course dining experience with optional wine pairings, showcasing bright luxurious flavour combinations and the best in contemporary Canadian cuisine.

“Being the most romantic day of the year, we’ve created a menu that truly measures up to the occasion, showing our passion for food and love of local ingredients,” says Chef de Cuisine, Quinton Bennett. “With the goal of creating a truly memorable experience, the menu presents an exquisite culinary journey perfectly paired with global wines that will enhance the nuances of the dishes.”

The evening’s featured cocktail, Pink Elephant, created by Head Bartender, Luke O’Toole is made with Absolut vodka, raspberry, rose and lemon; this romantic libation is the perfect floral and fruity aperitif.

As the evening of romance unfolds, guests are presented with a trio of amuse bouche featuring Deep Bay Kusshi oysters, free-range beef tartare, and a red onion marmalade and whipped goat cheese tart. Next, starter and main course offerings include steelhead salmon and tuna terrine with beet and sturgeon caviar; followed by an indulgent lobster parfait with a Thai salad and beignet; a poached saddle of rabbit with mushroom and celeriac purée; and a succulently-braised neck of lamb served with green olive, tomato jam and Moroccan spices.

For dessert, surrender to a sumptuous white chocolate, raspberry, lychee and rose creation presented by talented Pastry Chef, Wayne Kozinko. This deconstructed dish features a wonderful medley of flavours and textures including white chocolate ribbon, white chocolate Chantilly, lychee sorbet, crunchy raspberry meringue and a sprinkling of rose dust; followed by an intricate selection of petit four to conclude the evening.
