Dinner Series Celebrates the Launch of Hawksworth The Cookbook

Join Chef David Hawksworth as he cooks signature dishes from throughout his career, from his brand new cookbook at Wednesday night dinner series

Hawksworth Restaurant is thrilled to announce that the launch of Hawksworth The Cookbook will be accompanied by a weekly dinner series with Chef David Hawksworth, featuring some of the stand out recipes from the highly praised book. The celebrated chef will guide the Hawksworth Restaurant kitchen team to prepare and execute rotating tasting menus, each Wednesday in November, starting on November 4th.

“The creation of this cookbook has truly been a labour of love,” says Chef Hawksworth. “I’ve had fun going back to the start of my career in Europe and revisiting some of the classic recipes I learned at Michelin-starred restaurants, that helped shape my career. I’m grateful to our culinary teams at Hawksworth, Nightingale and Bel Café for their contributions and to so many who’ve had a hand in bringing this book together. I’m excited to share both the book and the dishes, as well as some fun stories from along the way.”

Kicking off on November 4th and running every Wednesday throughout the month of November, Chef David Hawksworth will be at the restaurant to sign cookbooks and personally prepare a four-course menu, showcasing dishes from Hawksworth The Cookbook. The first menu ($89pp) features crisp Apple, Beet and Burrata Salad; succulent Manila Clam Chowder, Smoked Sablefish; flavourful Roasted Duck Breast, XO Sauce, Carolina Gold Rice, Macadamia Puree; and Candy Cap Ice Cream, Walnut Wafer, Maple Crumble for dessert. Optional wine pairings by esteemed Wine Director Bryant Mao, recently recognized as Canada’s Best Sommelier of 2020 by Canada’s 100 Best, are available and will rotate with the menu ($56pp).

Hawksworth The Cookbook travels Chef Hawksworth’s culinary journey on both sides of the Atlantic with recipes that span more than three decades of cooking: in London (UK) with leading Michelin-starred chefs and in Vancouver (Canada), his hometown. The book’s recipes require varying levels of skill and time commitments; simpler recipes reflect the family-style dishes served at farm-to-table pioneer Nightingale and the casual fare of Bel Café with more technical dishes from Vancouver’s Ouest, the first restaurant where he served as head chef and his namesake restaurant Hawksworth which opened in 2011 and was named Canada’s Restaurant of the Year. The book has been created in collaboration with Jacob Richler and Hawksworth Restaurant Group’s Development Chef, Stephanie Noel and features stunning photography by Clinton Hussey.
