Seasonal Tasting Menus Launch at Hawksworth Restaurant 

Creative combinations, carefully sourced ingredients, bright bold flavours, and skilled techniques shine on new multi-course tasting menus

With the bounty of spring and summer approaching full bloom, Hawksworth Restaurant has reintroduced seasonal tasting menus at dinner time, offered alongside its popular à la carte menu. Guests are invited to savour the flavours of the season and experience a culinary journey that marries the best of British Columbia’s home-grown ingredients with elevated culinary techniques and bold, creative flavour combinations.

“Many of our guests are passionate and adventurous diners,” reports Chef David Hawksworth.  “Our new tasting menus are meticulously crafted, they embrace spontaneity and creativity that is truly reflective of the seasons. We are grateful to the many talented farmers, foragers, and quality food suppliers who are our partners, including Gathered Farm & Florals in Powell River, Klippers Organics in Cawston, Pemberton’s North Arm Farm and Oyster and King wild mushroom foragers. We are having fun in the kitchen, playing around with the best that B.C. offers and are ready to deliver a few delicious surprises to our guests.” 

Hawksworth’s Seasonal Tasting Menu consists of five courses, with optional wine pairings, and will change every two weeks. The epicurean adventure currently features dishes such as the divine northern pacific halibut crudo with watermelon radish and a lemongrass & lime leaf sorbet,  as well as tender and succulent charcoal grilled octopus with kohlrabi, white bean, and a pine honey gastrique,  and a delicate wild rose & hibiscus granita with riz au lait, rhubarb, rose meringue.⁠ The multi-course tasting menu delivers exceptional value at $99 with optional wine pairings priced at $55. 

Selected from Hawksworth’s Platinum Award winning wine cellar (2023 Vancouver International Wine Festival), complementing wines include local standouts such as the crisp and fresh Fitzpatrick H’s Brut, as well as international gems like the elegant Tinto Negro Malbec Limestone Block Mendoza, Agentina which perfectly accents Hawksworth’s lamb tenderloin served with blonde morel, lilac, preserved green almond, and lamb jus. 

Hawksworth Restaurant was recently ranked #20 in Canada by Canada’s 100 Best Restaurants, is Michelin Guide Recommended, and featured on La Liste’s prestigious World’s Best Restaurants list. Hawksworth is the only restaurant in Vancouver to hold the esteemed Forbes Travel Guide Four Star Rating. Hawksworth Restaurant is open nightly until 10pm and offers a full à la carte menu alongside the tasting menu, with cocktail hour menu from 4pm until 6pm. Hawksworth is open for lunch from 11.30am until 3pm and serves a three course Taste of Hawksworth prix-fixe menu, priced at $29.
