Inspired by the sensory experience and vibrant flavours found in Asian culture and cuisine, this month’s thoughtfully curated seasonal tasting menu demonstrates both the technical prowess and creative talents of Hawksworth’s culinary team. The five-course menu is priced at $99 (plus $55 with wine pairings) and features:
- First: Albacore Tuna Carpaccio with beetroot, daikon, cilantro, yuzu dressing
- Second: Sablefish, braised endive, carrot, orange miso glaze
- Third: Duck Breast with leek, black garlic, xo sauce
- Fourth: Honey Ginger Custard with preserved persimmon, roasted sesame ice cream
- Fifth: Mignardises; mandarin pâte de fruit, puffed rice caramel, and osmanthus tea bonbon
