Chef Hawksworth Welcomes Chefs Michel Jacob and Thomas Haas for Full- Circle Collaboration

Vancouver, B.C. (March 27, 2025)Hawksworth Restaurant is honoured to host The Reverence Dinner, a one-night-only culinary collaboration celebrating legacy, mentorship, and masterful technique. On Tuesday, April 15th, 2025, Chef David Hawksworth will welcome two esteemed culinary figures—Chef Michel Jacob and Chef Thomas Haas—for an evening of fine dining and storytelling.

Chef Michel Jacob, originally from Strasbourg, France, established Le Crocodile in Vancouver in 1983. Over more than four decades, he has garnered numerous accolades, including Vancouver Magazine’s Lifetime Achievement Award and induction into the BC Restaurant Hall of Fame. In 2024, the French government honoured him as an Officer in the Ordre du Mérite Agricole for his contributions to French gastronomy.

Chef Thomas Haas, a fourth-generation pâtissier from the Black Forest region of Germany, moved to Vancouver in 1995 to serve as Executive Pastry Chef at the Four Seasons Hotel. In 2000, he launched Thomas Haas Fine Pastries and Desserts Ltd., earning recognition as one of North America’s top chocolatiers and pastry chefs.

Born and raised in Vancouver, Chef David Hawksworth trained for a decade in Michelin-starred UK restaurants before returning to Canada in 2000. In 2011, he opened Hawksworth Restaurant, followed by Nightingale in 2013. His restaurants have earned top accolades, including enRoute and Maclean’s best restaurant lists. He published his first cookbook in 2022, solidifying his influence on Canada’s culinary landscape.

“This is a full-circle moment for me,” says Chef David Hawksworth. “Chef Michel Jacob was one of my earliest inspirations. I was just a teenager when I had the privilege of working with him at Le Crocodile, and his mentorship has shaped my career. To now welcome both Chef Jacob and Chef Haas to Hawksworth for this event is incredibly meaningful.”

The evening will commence with a Champagne reception in the elegant York Room, generously sponsored by Henriot. Guests will enjoy an engaging conversation with Chefs Hawksworth, Jacob, and Haas, hosted by media personality Fred Lee, as they share their culinary journeys and the enduring impact of mentorship in the industry.

Following the Champagne reception, guests will be treated to a meticulously curated six-course menu, each course crafted by the collaborating chefs to highlight their unique culinary artistry. This exceptional dining experience serves as an elegant tribute to mentorship and craftsmanship within the culinary world.

First Course – Chef Hawksworth: Yellowfin tuna carpaccio, Dungeness crab, with a fennel salad
Second Course – Chef Hawksworth: Wild mushroom & mascarpone agnolotti, & stinging nettle velouté
Third Course – Chef Jacob: Choucroute de poisson, velouté au Noilly Prat, & pomme soufflé
Fourth Course – Chef Jacob: Filet de bœuf grillé, sauce aux morilles, served with young carrot & courgette
Fifth Course – Chef Gonzalez: Genmaicha, rhubarb and cherry blossom sphere
Sixth Course – Chef Haas: Crispy chocolate fondant, fleur de sel & Ethiopian coffee and green cardamom ice cream
